If you are looking for a dinner that is quick to make and tastes great, then look no further. This pasta is such a simple dish to prepare, and is one of my family's favorites!
The recipe for this pasta is actually inspired by Buca di Beppo's Spicy Chicken Rigatoni. There are quite a few copy-cat recipes out there for the Rigatoni such as one found on Center Cut Cook. I wanted to make something similar to Buca di Beppo's Rigatoni, but with penne pasta because I think penne looks prettier on a plate. Also, I chose to use shrimp instead of chicken. The shrimp tastes so good with the sauce! If you don't like spicy foods, or if you are making this for small children, you can easily reduce the amount of red pepper flakes.
Ingredients:
2 tablespoons olive oil
3 cloves garlic, minced
1/2 tablespoon crushed red pepper
1 lb shrimp, devained and shells/tails removed
24 oz jar of marinara sauce ( I use Barilla)
15 oz jar of alfredo sauce (I use Bertolli)
1 cup frozen peas
1 lb box penne (prepared according to package instructions)
Directions:
Add olive oil to saucepan over medium heat. Add garlic and crushed red pepper, and cook for 3 minutes stirring constantly (be careful not to burn the garlic). Add shrimp and cook until shrimp are pink (approximately 5 minutes). Stir in the marinara sauce, followed by alfredo sauce. Stir until well blended. Bring to simmer and add peas. Cook for 5 minutes, then toss sauce with cooked pasta. Enjoy!
