I grew up eating this cornbread dressing. I love it just as much now as I did then. A perfect side dish for the holidays. It’s sweet. It’s savory. It’s comforting. It’s downright delicious.
And the best part is…how easy it is to make!

Preheat oven to 400 degrees.
In medium sized bowl, stir together the corn muffin mix, eggs, and milk. Batter will be slightly lumpy. Pour batter into greased baking dish, and bake until cornbread is golden brown (about 30 min.).
Remove from oven and set aside to cool.
Bring chicken broth to a bowl on medium-high heat. Add chopped celery and green onion, and cook for about 8 minutes. Remove from heat.
Use a spoon to break apart your cornbread until you have large crumbles of cornbread throughout. Pour chicken broth and veggies over the cornbread crumbles in the baking dish. Sprinkle poultry seasoning over the cornbread crumbles. Gently stir so that the broth, veggies, and seasoning are incorporated throughout.
Return to oven and continue baking for an additional 30 minutes. Remove the cornbread dressing from the oven and serve.
